  • 8 oz lo mein noodles
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 2 cups mixed vegetables (bell peppers, carrots, snap peas)
  • 3 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 2 green onions, chopped
  • 1 cup protein (tofu, chicken, or shrimp) – optional

Instructions

  1. Boil water in a large pot. Cook lo mein noodles according to package instructions until al dente (3-5 minutes). Drain and set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add mixed vegetables and stir-fry for 3-4 minutes until tender-crisp. If using protein, add it now and cook until heated through.
  4. Pour in soy sauce and drizzle sesame oil over the mixture; stir well to combine.
  5. Gently fold in cooked lo mein noodles and cook for an additional minute to warm through. Serve hot, garnished with chopped green onions.
