  • 4 cups fresh strawberries, hulled and halved
  • 1 cup granulated sugar
  • 1 unbaked pie crust (9-inch)

  • 3 tbsp cornstarch
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 425°F (220°C). Roll out the pie crust into a 9-inch pie plate and trim the edges. Prick the bottom with a fork.
  2. Bake the crust for 10-12 minutes until golden brown. Let it cool completely on a wire rack.
  3. In a medium saucepan over medium heat, combine water, sugar, cornstarch, and lemon juice. Stir until thickened.
  4. Remove from heat and gently fold in the halved strawberries while still warm.
  5. Pour the mixture into the cooled pie crust and refrigerate for at least 2 hours until set.
