Ingredients

Scale
  • 4 large egg whites
  • 1/4 cup bell peppers (finely chopped)
  • 1/2 cup fresh spinach (rinsed and chopped)
  • 1/4 small red onion (finely chopped)
  • 2 tbsp crumbled feta cheese
  • 1 tsp olive oil
  • Salt and pepper (to taste)

Instructions

  1. Chop bell peppers, onion, and spinach into bite-sized pieces.
  2. In a bowl, whisk the egg whites until frothy; season with salt and pepper.
  3. Heat olive oil in a non-stick skillet over medium heat. Sauté onions until translucent, then add bell peppers and spinach until soft.
  4. Pour the whisked egg whites evenly over the vegetables. Allow to set for about 2 minutes.
  5. Sprinkle feta cheese on top as the edges firm up; fold the omelet in half when fully cooked but still moist inside.
