  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 box (6 oz) stuffing mix
  • 1 cup low-sodium chicken broth
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh rosemary, chopped
  • 1 medium onion, diced
  • 1 cup celery, diced
  • 2 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, melt butter. Sauté onion and celery until soft, about 5 minutes.
  3. In a bowl, combine the stuffing mix with sautéed veggies and chicken broth; let sit for a few minutes.
  4. Season chicken breasts with salt and pepper. Layer in the baking dish and top with stuffing mixture.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes or until golden brown and cooked through.
