  • 1 wheel of brie cheese (about 8 oz)
  • 1 sheet of puff pastry (thawed)
  • 1/2 cup fresh pomegranate seeds
  • 2 tbsp honey
  • 1 tbsp fresh rosemary (finely chopped)
  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the thawed puff pastry on a floured surface to about 1/8 inch thick. Cut into squares large enough to encase the brie.
  3. Place a small piece of brie in the center of each square, top with pomegranate seeds and drizzle with honey.
  4. Fold the pastry corners over the filling and pinch tightly to seal.
  5. Whisk the egg with a splash of water to create an egg wash, then brush it over each pastry.
  6. Arrange on a lined baking sheet and bake for 15-20 minutes or until golden brown.
  7. Let cool slightly, garnish with fresh rosemary, and serve warm.
