  • 1 cup fresh figs, chopped
  • 1/4 cup balsamic vinegar
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tsp fresh rosemary or thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a roasting pan with nonstick cooking spray.
  2. In a large skillet over medium-high heat, heat olive oil. Sear the pork loin on all sides until golden brown (about 3-4 minutes per side).
  3. In a mixing bowl, combine chopped figs, minced garlic, balsamic vinegar, salt, pepper, and herbs to create the glaze.
  4. Transfer the seared pork loin to the roasting pan and pour the fig glaze over it generously.
