Description

  • 4 medium yellow onions, thinly sliced
  • 4 tbsp unsalted butter
  • 6 cups beef broth
  • 1/2 cup dry white wine
  • 1 crusty baguette, sliced
  • 1 cup shredded Gruyère cheese

Instructions

  1. Melt butter in a large pot over medium heat. Add sliced onions and sprinkle with salt; sauté for about 25-30 minutes until golden brown.
  2. Deglaze the pot with white wine, stirring to scrape up browned bits. Simmer until reduced by half.
  3. Add beef broth and bring to a gentle boil. Reduce heat and let simmer for another 20 minutes.
  4. Toast baguette slices in a preheated oven at 375°F (190°C) for around 10 minutes or until golden.
  5. Ladle soup into oven-safe bowls, place toasted baguette on top, and generously sprinkle shredded Gruyère cheese. Broil until bubbly and golden, about 5 minutes.
