Description

German Potato Salad is a warm and tangy dish that combines fluffy Yukon Gold potatoes with crispy bacon, zesty apple cider vinegar, and a hint of Dijon mustard.   • 2 lbs Yukon Gold potatoes
  • 6 slices bacon
  • 1/2 cup red onion, finely chopped
  • 1/3 cup apple cider vinegar
  • 2 tbsp Dijon mustard
  • 1/2 cup low-sodium chicken broth
  • 1 tsp sugar
  • Salt and pepper to taste

Instructions

  1. Boil the Yukon Gold potatoes in salted water for 15-20 minutes until tender but firm. Drain and let cool slightly.
  2. Cook the bacon in a skillet over medium heat until crispy, then transfer to paper towels to drain and chop.
  3. In a bowl, whisk together the apple cider vinegar, Dijon mustard, chicken broth, sugar, salt, and pepper.
  4. Cut the cooled potatoes into bite-sized pieces and combine them with the chopped bacon and red onion.
  5. Pour the dressing over the potato mixture and gently toss to coat.
  6. Allow to sit at room temperature for an hour before serving or refrigerate if desired.
