Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, whisk together flour, ginger, cinnamon, cocoa powder, baking soda, and salt until combined.
- In another bowl, cream softened butter with brown sugar until fluffy. Add molasses and egg; mix until smooth.
- Gradually add dry ingredients to the wet mixture until just combined.
- Scoop mounds of dough onto prepared baking sheets about two inches apart. Bake for 10-12 minutes until set but still soft.
- Cool completely on wire racks before making the filling by beating cream cheese with powdered sugar and vanilla until smooth.
- Assemble by spreading or piping filling between two cookies.
