Description

Greek Lemon Rice is a vibrant and refreshing side dish that embodies the flavors of the Mediterranean. Ingredients

  • 1 cup long-grain rice (jasmine or basmati)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 cups low-sodium vegetable broth
  • Juice and zest of 1 fresh lemon
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse the rice under cold water until clear to remove excess starch.
  2. In a medium saucepan, heat olive oil over medium heat. Sauté minced garlic for about a minute until fragrant.
  3. Add the rinsed rice to the saucepan and toast for about 2 minutes until slightly translucent.
  4. Stir in vegetable broth along with lemon juice and zest. Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes or until liquid is absorbed.
  5. Remove from heat; let sit covered for 5 minutes. Fluff with a fork and stir in chopped parsley.
  6. Serve warm alongside your favorite main dishes.
