  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 red bell peppers, chopped
  • 2 medium zucchini, sliced
  • 1 large red onion, chopped
  • 4 cloves garlic, minced
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a bowl, whisk together olive oil, lemon juice, oregano, minced garlic, salt, and pepper.
  3. Place chicken in a resealable bag or bowl and pour half of the marinade over it. Let it marinate while you prepare the vegetables.
  4. Chop bell peppers, zucchini, and onion into bite-sized pieces; arrange them around the edges of the baking sheet.
  5. Remove chicken from marinade (discard leftover marinade) and place it in the center of the baking sheet. Drizzle remaining marinade over everything.
  6. Roast for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and veggies are tender.
