Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 red bell peppers, chopped
- 2 medium zucchini, sliced
- 1 large red onion, chopped
- 4 cloves garlic, minced
- 3 tbsp olive oil
- Juice of 1 lemon
- 2 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- In a bowl, whisk together olive oil, lemon juice, oregano, minced garlic, salt, and pepper.
- Place chicken in a resealable bag or bowl and pour half of the marinade over it. Let it marinate while you prepare the vegetables.
- Chop bell peppers, zucchini, and onion into bite-sized pieces; arrange them around the edges of the baking sheet.
- Remove chicken from marinade (discard leftover marinade) and place it in the center of the baking sheet. Drizzle remaining marinade over everything.
- Roast for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and veggies are tender.
