- 3–4 boneless, skinless chicken breasts (about 1 pound total)
- 3 tablespoons harissa paste
- 6 cups mixed fresh greens (arugula and spinach)
- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- ½ medium red onion, thinly sliced
- 2 tablespoons freshly squeezed lemon juice
- 3 tablespoons extra virgin olive oil
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
Instructions
- Marinate the chicken by mixing harissa paste, olive oil, lemon juice, salt, and pepper in a bowl. Add chicken breasts and let marinate for at least 30 minutes.
- Preheat your grill or skillet over medium heat. Remove chicken from marinade (save it) and cook for about 6-7 minutes per side until fully cooked (internal temperature of 165°F). Set aside to rest.
- While the chicken cools, chop the greens into bite-sized pieces and place in a large bowl. Add diced cucumber, halved cherry tomatoes, and sliced red onion.
- In a small bowl or jar, whisk together the reserved marinade (cooked), additional lemon juice, and olive oil until blended.
- Slice the rested chicken into strips or cubes and place on top of the prepared salad base.
- Drizzle the dressing over the salad before serving; toss gently to coat everything evenly and garnish with fresh herbs.
