  • 34 boneless, skinless chicken breasts (about 1 pound total)
  • 3 tablespoons harissa paste
  • 6 cups mixed fresh greens (arugula and spinach)
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ medium red onion, thinly sliced
  • 2 tablespoons freshly squeezed lemon juice
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions

  1. Marinate the chicken by mixing harissa paste, olive oil, lemon juice, salt, and pepper in a bowl. Add chicken breasts and let marinate for at least 30 minutes.
  2. Preheat your grill or skillet over medium heat. Remove chicken from marinade (save it) and cook for about 6-7 minutes per side until fully cooked (internal temperature of 165°F). Set aside to rest.
  3. While the chicken cools, chop the greens into bite-sized pieces and place in a large bowl. Add diced cucumber, halved cherry tomatoes, and sliced red onion.
  4. In a small bowl or jar, whisk together the reserved marinade (cooked), additional lemon juice, and olive oil until blended.
  5. Slice the rested chicken into strips or cubes and place on top of the prepared salad base.
  6. Drizzle the dressing over the salad before serving; toss gently to coat everything evenly and garnish with fresh herbs.
