  • 100g crumbled feta cheese
  • 2 tbsp pure honey
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh thyme leaves
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes, then cut into even rounds about ½ inch thick. Arrange on a parchment-lined baking sheet.
  3. Drizzle olive oil over the sweet potato rounds and toss gently to coat.
  4. Sprinkle fresh thyme, salt, and pepper over the rounds, tossing again for even seasoning.
  5. Roast in the preheated oven for 25-30 minutes until tender and golden around the edges.
  6. Once out of the oven, top each round with crumbled feta and drizzle with honey before serving.
