  • 2 lbs boneless, skinless chicken thighs
  • 1/2 cup low-sodium soy sauce
  • 1/2 cup fresh pineapple juice
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup brown sugar
  • 1/4 cup ketchup

Instructions

  1. In a large bowl, combine soy sauce, pineapple juice, garlic, ginger, brown sugar, and ketchup to create the marinade.
  2. Add chicken thighs to the marinade, cover, and refrigerate for at least 1 hour (overnight is best).
  3. Preheat your grill to medium-high heat (375°F or 190°C).
  4. Grill marinated chicken for 6-7 minutes per side until it reaches an internal temperature of 165°F (74°C), basting occasionally with reserved marinade.
  5. Remove from the grill and let rest for 5 minutes before slicing.
