  • 3 lbs chuck roast
  • 4 medium carrots, chopped
  • 3 medium potatoes, cubed
  • 1 large onion, chopped
  • 4 cups low-sodium beef broth
  • 4 garlic cloves, minced
  • 2 tsp dried thyme
  • 2 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Sear the seasoned chuck roast in olive oil using the sauté function on your Instant Pot for about 4-5 minutes on each side until browned.
  2. Remove the roast and sauté minced garlic and onions in the pot until fragrant (about 2 minutes).
  3. Deglaze the pot by adding beef broth and scraping any brown bits off the bottom.
  4. Return the chuck roast to the pot on a bed of carrots and potatoes. Add remaining broth and herbs; secure the lid.
  5. Set to high pressure for 60 minutes, then let it naturally release for 15-20 minutes.
  6. Remove the roast, let it rest for five minutes before slicing, and serve with vegetables and broth.
