- 6 cups mixed apples (Granny Smith and Honeycrisp)
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 tsp ground cinnamon
- 1/2 cup cold unsalted butter
- 3–4 tbsp ice water
- Juice of 1 lemon
Instructions
- Preheat oven to 425°F (220°C). Peel, core, and slice the apples; toss them with granulated sugar, brown sugar, cinnamon, and lemon juice in a bowl.
- In another bowl, mix flour and salt. Cut in cold butter until crumbly. Gradually add ice water until dough forms; chill for 30 minutes.
- Roll out half the dough into a circle; fit it into a pie pan. Fill with the apple mixture.
- Roll out remaining dough to cover the pie; cut slits for steam to escape and seal edges.
- Bake for 45-50 minutes until golden brown. Cool slightly before serving.
