  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh mozzarella, sliced
  • 1 can (28 oz) crushed tomatoes
  • 4 garlic cloves, minced
  • 2 tsp Italian seasoning blend
  • 2 tbsp extra virgin olive oil
  • ¼ cup fresh basil leaves, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly coat a baking dish with cooking spray.
  2. Season chicken breasts with salt and pepper. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute).
  3. Add crushed tomatoes and Italian seasoning; simmer until thickened.
  4. Place seasoned chicken in the baking dish, pour sauce over them, and top with mozzarella slices.
  5. Cover with aluminum foil and bake for 25 minutes. Remove foil and broil for an additional 10 minutes until cheese is golden brown.
