  • 2 medium yellow onions, chopped
  • 2 medium carrots, sliced
  • 2 medium waxy potatoes, diced
  • 4 oz Japanese curry roux (mild or spicy)
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 4 cups low-sodium vegetable broth
  • 2 tbsp low-sodium soy sauce
  • 2 green onions, sliced (for garnish)

Instructions

  1. Prepare the ingredients by chopping vegetables and dicing chicken into bite-sized pieces.
  2. In a large pot over medium heat, sauté onions in oil until translucent. Add garlic and ginger; cook for 1-2 minutes.
  3. Stir in carrots and potatoes, then add chicken; brown for about 5 minutes.
  4. Pour vegetable broth into the pot and bring to a boil. Lower heat and let simmer for 15 minutes until veggies are tender.
