  • 2 ripe kiwis, diced
  • 1 cup (100g) sharp cheddar cheese, shredded
  • 2 sheets puff pastry (10 oz/280g total)
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1/2 cup (120ml) low-sodium beef broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Sauté chopped onion in a skillet over medium heat until translucent (about 5 minutes). Add minced garlic and cook for another minute.
  3. Add ground beef; cook until browned, breaking it apart as you go.
  4. Stir in diced kiwis, thyme, paprika, salt, and pepper. Cook briefly until combined (about 3 minutes).
  5. Pour in beef broth; simmer on low heat for 5-7 minutes until slightly thickened.
  6. Roll out puff pastry on a floured surface. Line a baking dish with one sheet, fill with beef mixture, sprinkle cheese on top, and cover with the second pastry sheet.
  7. Bake for 25-30 minutes or until golden brown.
