  • 1 cup fresh lemon juice (about 45 lemons)
  • Zest of 2 lemons
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/2 cup unsalted butter (1 stick)
  • 2 cups fresh blueberries
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an oven-safe dish.
  2. In a medium saucepan over low heat, whisk together lemon juice, zest, sugar, and eggs until thickened (about 10 minutes). Stir in butter until melted and let cool slightly.
  3. Rinse blueberries under cool water and pat dry.
  4. In the greased dish, pour half the lemon curd mixture, layer with blueberries, then pour the remaining curd on top.
  5. Bake for 20-25 minutes until set but still jiggly in the center. Allow to cool completely before chilling for at least an hour.
  6. Whip heavy cream until soft peaks form; sweeten if desired.
  7. Serve chilled, topped with whipped cream and extra blueberries.
