  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • ¼ cup lemon juice
  • Zest of 1 lemon
  • ¼ cup lime juice
  • Zest of 1 lime
  • 1 can (21 oz) cherry pie filling
  • ½ cup chopped pistachios
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs and melted butter, then press firmly into the bottom of a springform pan.
  2. In a bowl, beat softened cream cheese until smooth. Gradually add sugar until well combined.
  3. Mix in lemon juice, lime juice, lemon zest, and lime zest until incorporated.
  4. Gently fold in sour cream until no streaks remain.
  5. Pour half of the cheesecake batter over the crust; dollop with cherry pie filling and swirl gently.
  6. Bake for 55-60 minutes until edges are set but center jiggles slightly. Cool in the oven with the door ajar for one hour.
  7. Chill in the refrigerator for at least four hours before serving.
