  • 1 lb boneless, skinless chicken thighs
  • 2 stalks fresh lemongrass, minced
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • ¼ cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp lime juice

Instructions

  1. In a large bowl, whisk together minced lemongrass, garlic, ginger, soy sauce, brown sugar, and lime juice until the sugar dissolves.
  2. Add chicken thighs to the marinade and coat thoroughly. Cover and refrigerate for at least 1 hour (or overnight for deeper flavor).
  3. Preheat your grill to medium-high heat (375°F/190°C).
  4. Remove chicken from marinade and grill for 6-7 minutes on each side until cooked through (internal temperature should reach 165°F/75°C), brushing occasionally with leftover marinade.
  5. Let chicken rest for 5 minutes before slicing. Serve warm with any remaining marinade drizzled over the top.
