Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 6 cups low-sodium chicken broth
  • 2 large carrots, diced
  • 2 stalks celery, diced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by dicing the vegetables while the chicken thaws if frozen.
  2. In a large pot over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute).
  3. Add chicken breasts and pour in chicken broth until submerged. Bring to a boil, then reduce to simmer for about 20 minutes or until cooked through.
  4. Remove chicken, shred it using two forks, and return it to the pot along with diced carrots and celery. Simmer for another 10-15 minutes until veggies are tender.
  5. Stir in dried thyme and season with salt and pepper to taste. Serve hot with crusty bread.
