  • ½ cup sour cream (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Spray a 9×13 inch baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground beef for about 6-8 minutes. Drain excess fat.
  3. Add chopped onion and bell peppers to the skillet; sauté until tender (3-5 minutes).
  4. Stir in black beans and taco seasoning; simmer for an additional 3 minutes.
  5. Layer half of the beef mixture in the baking dish, followed by half of the cheese. Repeat with remaining beef and cheese.
  6. Bake for about 20 minutes or until bubbly and golden brown. Top with sour cream and cilantro before serving.
