  • 1 cup fresh shiitake mushrooms, chopped
  • 1 cup fresh cremini mushrooms, chopped
  • 2 shallots, finely chopped
  • 2 tsp truffle oil
  • 1 cup Gruyère cheese or Parmesan, grated
  • 1 tbsp fresh thyme leaves
  • Salt and pepper to taste
  • 2 tbsp unsalted butter

Instructions

  1. Preheat oven to 400°F (200°C). Roll out puff pastry on a floured surface to about 1/8 inch thick and cut into circles to fit muffin tin.
  2. In a skillet over medium heat, melt butter. Sauté shallots until translucent (3-5 minutes), then add mushrooms and cook until golden brown.
  3. Stir in thyme, salt, pepper, and drizzle in truffle oil; mix well.
  4. Spoon mushroom mixture into pastry bases, top with grated cheese.
  5. Bake for 15-20 minutes until golden brown and crisp.
