  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1/2 cup full-fat mayonnaise (or Greek yogurt)
  • 2 tbsp Dijon mustard
  • 1 cup celery, chopped (about 2 stalks)
  • 1 cup red grapes, halved
  • 1/2 cup chopped walnuts (toasted for extra flavor)
  • 2 tbsp fresh dill or parsley, chopped
  • 4 large flaky croissants

Instructions

  1. Preheat your oven to 375°F (190°C). Place seasoned chicken breasts in a baking dish and drizzle lightly with olive oil. Bake for about 25 minutes or until juices run clear.
  2. While the chicken cools, chop the celery and grapes. In a large bowl, mix together mayonnaise and Dijon mustard until smooth.
  3. Shred the cooled chicken using two forks and combine it with the mayo mixture. Gently fold in the celery, grapes, walnuts, and fresh herbs.
  4. Slice each croissant in half horizontally and generously fill one half with the chicken salad. Top with the other half to assemble.
