Ingredients

  • 1 cup almond flour (finely ground)
  • 1 3/4 cups powdered sugar
  • 3 large egg whites (room temperature)
  • 1/4 cup granulated sugar
  • 1/2 cup raspberry puree (strained)
  • 1 tsp rose water
  • 4 tbsp unsalted butter (softened)
  • 4 oz cream cheese (softened)
  • Food coloring (optional)

Instructions

  1. Preheat oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. Whip egg whites and gradually add granulated sugar until stiff peaks form.
  3. Sift almond flour and powdered sugar together twice to eliminate lumps.
  4. Gently fold dry ingredients into meringue until smooth.
  5. Incorporate raspberry puree and rose water; mix gently.
  6. Pipe onto prepared sheets, tapping lightly to remove air bubbles.
  7. Bake for 15-20 minutes until firm with feet formed.
  8. While cooling, beat butter and cream cheese; mix in raspberry puree and rose water for filling.
  9. Once cooled, assemble macarons with filling.
