- 4 cups baby spinach
- 15 oz ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 2 tsp olive oil
- 2 cups marinara sauce
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, heat olive oil. Add minced garlic and sliced mushrooms; sauté until tender (about 5 minutes). Stir in spinach until wilted; season with salt and pepper.
- In a bowl, mix ricotta cheese with half the Parmesan, salt, pepper, and an optional egg for creaminess.
- In a baking dish, spread a thin layer of marinara sauce on the bottom. Layer noodles, half the sautéed vegetables, dollops of ricotta mixture, and mozzarella cheese. Repeat layers until ingredients are used up, ending with noodles topped with marinara and mozzarella.
