  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter
  • 1/2 cup water
  • 1/2 cup roasted pistachios, crushed
  • 2 tbsp culinary grade matcha powder
  • 1/4 cup granulated sugar
  • 3 large eggs
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 400°F (200°C). In a saucepan over medium heat, combine water and butter until melted. Stir in flour until a ball forms.
  2. Remove from heat and cool slightly. Add eggs one at a time, mixing until smooth after each addition.
  3. Pipe small mounds onto lined baking sheets. Bake for 20-25 minutes until golden brown.
  4. While baking, whip heavy cream with sugar, matcha powder, crushed pistachios, and vanilla until stiff peaks form.
  5. Once cooled, fill puffs with the prepared cream using a piping bag.
