- 1 ½ cups crushed graham crackers
- ½ cup unsalted butter, melted
- 1 cup roasted and salted pistachios, chopped
- 2 tbsp culinary-grade matcha powder
- 16 oz full-fat cream cheese, softened
- 1 cup sour cream
- ¾ cup granulated sugar
- 3 large eggs, room temperature
- 1 tsp pure vanilla extract
- 2 tbsp fresh lemon juice
Instructions
- Preheat your oven to 325°F (160°C). In a bowl, mix crushed graham crackers with melted butter. Press into the bottom of a springform pan.
- In a large bowl, blend softened cream cheese until smooth. Gradually mix in sugar, then add sour cream, vanilla extract, and lemon juice.
- Beat in eggs one at a time until just combined.
- In another bowl, mix matcha powder with half of the cheesecake batter. Fold chopped pistachios into the other half of the batter.
- Pour alternating spoonfuls of both batters into the crust and swirl with a knife.
- Bake for 50-60 minutes until set but slightly jiggly in the center. Turn off the oven and let it cool inside for an hour before refrigerating for at least four hours.
