  • 1 ½ cups crushed graham crackers
  • ½ cup unsalted butter, melted
  • 1 cup roasted and salted pistachios, chopped
  • 2 tbsp culinary-grade matcha powder
  • 16 oz full-fat cream cheese, softened
  • 1 cup sour cream
  • ¾ cup granulated sugar
  • 3 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 2 tbsp fresh lemon juice

Instructions

  1. Preheat your oven to 325°F (160°C). In a bowl, mix crushed graham crackers with melted butter. Press into the bottom of a springform pan.
  2. In a large bowl, blend softened cream cheese until smooth. Gradually mix in sugar, then add sour cream, vanilla extract, and lemon juice.
  3. Beat in eggs one at a time until just combined.
  4. In another bowl, mix matcha powder with half of the cheesecake batter. Fold chopped pistachios into the other half of the batter.
  5. Pour alternating spoonfuls of both batters into the crust and swirl with a knife.
  6. Bake for 50-60 minutes until set but slightly jiggly in the center. Turn off the oven and let it cool inside for an hour before refrigerating for at least four hours.
