Description

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fruit jam (your choice)
  • 1 cup powdered sugar (for icing)
  • 2 tbsp milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, cream softened butter and sugar until fluffy. Add eggs one at a time and mix in vanilla.
  4. Gradually combine dry ingredients with the wet mixture until just combined.
  5. Spread half the dough in the prepared pan. Spoon fruit jam over it and layer with remaining dough.
  6. Bake for 25–30 minutes until golden brown. Let cool before icing with powdered sugar mixed with milk.
