  • 12 pork or chicken potstickers (store-bought or homemade)
  • 2 cups bok choy, chopped
  • 1 cup shiitake or button mushrooms, sliced
  • 4 cups low-sodium vegetable or chicken broth
  • 1-inch piece fresh ginger, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp soy sauce
  • 2 scallions, sliced (for garnish)
  • Sriracha or chili oil (for serving)

Instructions

  1. Prepare all ingredients: chop bok choy, slice mushrooms, and mince garlic and ginger.
  2. Heat a splash of oil in a large pot over medium heat. Sauté garlic and ginger until fragrant (about 1 minute). Add mushrooms and cook until softened (about 3 minutes).
  3. Pour in the broth and bring to a gentle boil.
  4. Carefully add potstickers; simmer according to package directions (5-7 minutes) until cooked through.
  5. Add bok choy during the last two minutes of cooking to retain crunch.
  6. Stir in soy sauce to taste, ladle into bowls, and garnish with scallions and sriracha.
