  • 4 large eggs (room temperature)
  • ¾ cup vegetable oil or applesauce
  • 8 oz cream cheese (softened)
  • 4 cups powdered sugar (sifted)
  • 2 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix together pumpkin puree, granulated sugar, brown sugar, eggs, and vegetable oil until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Divide the batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. While cooling, prepare cream cheese frosting by beating softened cream cheese and butter until creamy. Gradually add powdered sugar and vanilla extract.
  7. Once cakes are cool, frost between layers and on top of the cake.
