Ingredients

  • 2 cups fresh raspberries (divided)
  • 1/2 cup granulated sugar (divided)
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • 1 tbsp gelatin
  • 3 tbsp cold water

Instructions

  1. Sprinkle gelatin over cold water in a small bowl and let it bloom for about 5 minutes.
  2. In a saucepan, heat half of the raspberries with 1/4 cup sugar until they break down, about 5 minutes. Let cool slightly.
  3. Puree the raspberry mixture in a blender and strain through a fine mesh sieve to remove seeds.
  4. In a large mixing bowl, whip heavy cream until soft peaks form. Add vanilla extract and continue whipping until stiff peaks form.
  5. Gently fold in the raspberry puree and remaining sugar, followed by the bloomed gelatin until well combined.
  6. Spoon mousse into serving dishes and refrigerate for at least 2 hours to set. Serve topped with remaining fresh raspberries.
