- 3 tbsp cold water

- Sprinkle gelatin over cold water in a small bowl and let it bloom for about 5 minutes.
- In a saucepan, heat half of the raspberries with 1/4 cup sugar until they break down, about 5 minutes. Let cool slightly.
- Puree the raspberry mixture in a blender and strain through a fine mesh sieve to remove seeds.
- In a large mixing bowl, whip heavy cream until soft peaks form. Add vanilla extract and continue whipping until stiff peaks form.
- Gently fold in the raspberry puree and remaining sugar, followed by the bloomed gelatin until well combined.
- Spoon mousse into serving dishes and refrigerate for at least 2 hours to set. Serve topped with remaining fresh raspberries.
