  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1 cup mascarpone cheese
  • 1 cup heavy whipping cream
  • 1/4 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 2 cups fresh berries (strawberries or raspberries)
  • 1 tbsp cocoa powder (for garnish)

Instructions

  1. Preheat your oven as per cake mix instructions and grease two 9-inch round pans.
  2. In a mixing bowl, combine the red velvet cake mix, eggs, oil, and water until smooth.
  3. Pour the batter into the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Allow to cool completely.
  4. In another bowl, beat together mascarpone cheese, heavy whipping cream, sugar, and vanilla extract until soft peaks form.
  5. Crumble the cooled cakes into bite-sized pieces.
  6. In a large glass bowl or individual glasses, layer crumbled cake and mascarpone cream alternately until all ingredients are used up. Top with fresh berries.
