  • 1 whole capon (about 56 pounds)
  • 1/2 cup high-quality truffle butter
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Juice of 1 lemon
  • 6 cloves garlic, crushed
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Line a roasting pan with parchment paper.
  2. Rinse and pat dry the capon. Loosen the skin on the breast and insert dollops of truffle butter.
  3. Rub olive oil over the capon, seasoning generously with salt, pepper, rosemary, and thyme.
  4. Squeeze half a lemon inside the cavity along with crushed garlic cloves. Squeeze remaining lemon juice over the skin before roasting.
  5. Roast for about 1 hour and 45 minutes or until internal temperature reaches 165°F (75°C), basting occasionally.
  6. Let rest for 15 minutes before carving.
