Ingredients

  • 2 medium-sized beets (about 250g)
  • 1/2 cup tahini
  • 1/4 cup freshly squeezed lemon juice
  • 2 cloves roasted garlic
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap each beet in aluminum foil and roast on a baking sheet for 45-60 minutes until tender.
  2. Once cool, peel the beets and place them in a food processor.
  3. Add tahini, lemon juice, roasted garlic, salt, and pepper to the food processor. Blend until smooth.
  4. With the processor running, drizzle in olive oil until achieving a creamy consistency. Adjust seasoning if needed.
  5. Serve in a bowl drizzled with olive oil alongside pita chips or veggie sticks.
