  • 1 pound fresh carrots, peeled and cut into 2-inch pieces
  • 1 cup candied pecans
  • 4 oz soft goat cheese, crumbled
  • 2 tbsp olive oil
  • 2 tbsp honey (or maple syrup)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the carrot pieces in olive oil, salt, and pepper until well coated. Spread them out evenly on the prepared baking sheet.
  3. Roast the carrots for 25-30 minutes until fork-tender and caramelized, stirring halfway through.
  4. If making candied pecans from scratch, prepare them during the last few minutes of roasting.
  5. Once the carrots are done, arrange them on a serving platter. Top with candied pecans and crumbled goat cheese.
  6. Drizzle with extra honey if desired before serving.
