Ingredients

  • 2 cups fresh pineapple, cut into chunks
  • 1 cup strawberries, hulled and halved
  • 2 medium peaches, sliced into wedges
  • 1/2 cup dark rum
  • 2 tbsp brown sugar
  • 2 tbsp fresh lime juice
  • 6 bamboo skewers (soaked in water)

Instructions

  1. Wash the fruits thoroughly and cut them into appropriate sizes.
  2. In a bowl, mix dark rum, brown sugar, and lime juice until combined.
  3. Toss the fruit in the marinade and let it soak for at least 30 minutes.
  4. Thread the marinated fruit onto soaked bamboo skewers in an alternating pattern.
  5. Preheat the grill to medium heat and grill the skewers for 3-4 minutes on each side until caramelized.
  6. Remove from grill, drizzle with remaining marinade if desired, and serve warm.
