Ingredients
Scale
- 2 salmon fillets (6 oz each)
- 1 cup cooked jasmine rice
- 2 tbsp pickling brine
- 3 tbsp Japanese mayo
- 2 tbsp chopped fresh cilantro or green onions
- 1 tbsp low-sodium soy sauce
- 1 ripe avocado, sliced
- 1 tbsp toasted sesame seeds (optional)
- Lime wedges for serving
Instructions
- Preheat the oven to 400°F (200°C). Place salmon fillets on a parchment-lined baking tray and season lightly with salt.
- If not already cooked, prepare jasmine rice by combining 1 cup rinsed rice with 1.5 cups water in a pot over medium heat. Bring to a boil, then reduce heat and simmer until cooked through (about 15 minutes).
- Bake salmon for 12-15 minutes until it flakes easily with a fork.
- While the salmon bakes, whisk together mayo and pickling brine in a small bowl until creamy.
- To assemble, layer warm rice in bowls, top with flaked salmon, and drizzle generously with the brine-mayo mix.
- Garnish each bowl with herbs, sliced avocado, sesame seeds, and lime wedges. Serve warm.
