  • 2 salmon fillets (6 oz each)
  • 1 cup cooked jasmine rice
  • 2 tbsp pickling brine
  • 3 tbsp Japanese mayo
  • 2 tbsp chopped fresh cilantro or green onions
  • 1 tbsp low-sodium soy sauce
  • 1 ripe avocado, sliced
  • 1 tbsp toasted sesame seeds (optional)
  • Lime wedges for serving

Instructions

  1. Preheat the oven to 400°F (200°C). Place salmon fillets on a parchment-lined baking tray and season lightly with salt.
  2. If not already cooked, prepare jasmine rice by combining 1 cup rinsed rice with 1.5 cups water in a pot over medium heat. Bring to a boil, then reduce heat and simmer until cooked through (about 15 minutes).
  3. Bake salmon for 12-15 minutes until it flakes easily with a fork.
  4. While the salmon bakes, whisk together mayo and pickling brine in a small bowl until creamy.
  5. To assemble, layer warm rice in bowls, top with flaked salmon, and drizzle generously with the brine-mayo mix.
  6. Garnish each bowl with herbs, sliced avocado, sesame seeds, and lime wedges. Serve warm.
