- 1 sheet puff pastry (thawed)
- 2 (6 oz) fresh salmon fillets
- 2 tbsp fresh dill (chopped)
- 1 tbsp lemon juice
- 4 oz cream cheese (softened)
- 1 egg yolk (beaten with 1 tsp water)
- Salt & pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, mix cream cheese, lemon juice, dill, salt, and pepper until smooth. Fold in diced salmon.
- Roll out the puff pastry on a floured surface to about 1/4 inch thick; cut into rectangles.
- Place salmon fillet in the center of each rectangle, top with filling, and fold over to seal.
- Brush tops with egg yolk mixture for shine.
- Bake for 20-25 minutes or until golden brown.
