Ingredients

Scale
  • 1 cup all-purpose flour
  • 4 tbsp unsalted butter, cold and cubed
  • 1/4 tsp salt
  • 34 tbsp cold water
  • 1/2 cup shredded cheese (cheddar or gruyere)
  • 1/3 cup diced ham or bacon
  • 2 tbsp chopped fresh herbs (chives or parsley)

Instructions

  1. In a bowl, mix flour and salt. Cut in cold butter until crumbly. Gradually add cold water until dough forms. Wrap in plastic and chill for 30 minutes.
  2. On a floured surface, roll dough to about 1/8 inch thick. Cut into rectangles (about 3×4 inches).
  3. Layer cheese, ham or bacon, and herbs on half of each rectangle. Leave edges clear. Top with another rectangle and seal edges with a fork.
  4. Preheat oven to 375°F (190°C). Place on parchment-lined baking sheet and brush with egg wash if desired. Bake for 20-25 minutes until golden brown.
  5. Let cool slightly before serving warm with your favorite dipping sauce.
