Ingredients

  • 9 no-boil lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups fresh spinach, chopped
  • 1 lb seafood medley (shrimp, scallops, crab meat)
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • 1 tsp lemon juice

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, combine ricotta cheese, spinach, salt, pepper, and half of the Parmesan.
  3. Sauté the seafood medley in a skillet over medium heat until just cooked (3–5 minutes). Add lemon juice.
  4. Spread marinara sauce on the bottom of a baking dish. Layer with noodles, half the ricotta mixture, and half the seafood. Repeat layers.
  5. Top with remaining marinara sauce and mozzarella; sprinkle with remaining Parmesan.
  6. Cover with foil; bake for 25 minutes. Remove foil and bake an additional 15 minutes until golden brown.
