- 9 no-boil lasagna noodles
- 2 cups ricotta cheese
- 3 cups fresh spinach, chopped
- 1 lb seafood medley (shrimp, scallops, crab meat)
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- ½ cup freshly grated Parmesan cheese
- Salt and pepper to taste
- 1 tsp lemon juice
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, combine ricotta cheese, spinach, salt, pepper, and half of the Parmesan.
- Sauté the seafood medley in a skillet over medium heat until just cooked (3–5 minutes). Add lemon juice.
- Spread marinara sauce on the bottom of a baking dish. Layer with noodles, half the ricotta mixture, and half the seafood. Repeat layers.
- Top with remaining marinara sauce and mozzarella; sprinkle with remaining Parmesan.
- Cover with foil; bake for 25 minutes. Remove foil and bake an additional 15 minutes until golden brown.
