  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar (for filling)
  • 1/2 cup sour cream
  • 2 cups fresh cranberries
  • 3/4 cup powdered sugar
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • 3 large eggs

Instructions

  1. Preheat oven to 325°F (160°C). Combine graham cracker crumbs, melted butter, and 1/4 cup sugar. Press into an even layer in an 8×8-inch baking dish.
  2. Bake crust for about 10 minutes until lightly golden. Cool slightly.
  3. Beat cream cheese until smooth; add remaining sugar, sour cream, lemon juice, vanilla, and eggs one at a time until combined. Pour over cooled crust.
  4. Bake for 30-35 minutes until edges are firm but center is slightly jiggly. Cool to room temperature; refrigerate for at least two hours.
  5. For topping: Cook cranberries and powdered sugar over medium heat until berries burst and mixture thickens (about 10 minutes). Cool slightly before pouring over chilled cheesecake.
