  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 bell pepper (any color), diced
  • 3 tbsp harissa paste (adjust to taste)
  • 1 can (14 oz) diced tomatoes
  • 4 large eggs
  • Fresh cilantro or parsley, for garnish
  • Optional: ½ cup crumbled feta cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent. Stir in garlic and bell pepper; sauté until tender.
  2. Mix in harissa paste and canned tomatoes; simmer for about 10 minutes until thickened.
  3. Create wells in the sauce and crack an egg into each well. Cover the skillet and cook until whites are set and yolks are runny (about 5-7 minutes).
