Ingredients
- 1 cup short-grain sushi rice

- 8 oz sushi-grade salmon, diced
- 1 ripe avocado, mashed

- 2 tbsp mayonnaise
- 4 nori sheets, cut into squares
- 2 green onions, finely chopped
- 1 tbsp toasted sesame seeds
Instructions
- Rinse sushi rice under cold water until clear. Combine with water in a pot; bring to a boil. Cover, reduce heat to low, and cook for 15 minutes. Let sit covered for another 10 minutes off heat.
- In a bowl, mix diced salmon with mashed avocado, Sriracha sauce, and mayonnaise until well combined.
- Preheat oven to 350°F (175°C). Press nori squares into muffin tins and bake for 5–7 minutes until crispy.
- Fill each nori cup with sushi rice followed by the salmon mixture. Top with green onions and sesame seeds.
