  • 1 cup short-grain sushi rice
  • 1 ¼ cups water
  • 8 oz sushi-grade salmon, diced
  • 1 ripe avocado, mashed
  • 3 tbsp Sriracha sauce (adjust for heat preference)
  • 2 tbsp mayonnaise
  • 4 nori sheets, cut into squares
  • 2 green onions, finely chopped
  • 1 tbsp toasted sesame seeds

Instructions

  1. Rinse sushi rice under cold water until clear. Combine with water in a pot; bring to a boil. Cover, reduce heat to low, and cook for 15 minutes. Let sit covered for another 10 minutes off heat.
  2. In a bowl, mix diced salmon with mashed avocado, Sriracha sauce, and mayonnaise until well combined.
  3. Preheat oven to 350°F (175°C). Press nori squares into muffin tins and bake for 5–7 minutes until crispy.
  4. Fill each nori cup with sushi rice followed by the salmon mixture. Top with green onions and sesame seeds.
  5. Serve immediately or refrigerate for later enjoyment.
