  • 12 jumbo pasta shells
  • 1 cup ricotta cheese
  • 2 cups fresh spinach (packed)
  • ½ cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 cloves garlic (minced)
  • 1 tbsp olive oil
  • 1 tsp dried Italian herbs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking dish.
  2. Cook jumbo pasta shells in boiling salted water until al dente; drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add spinach and cook until wilted.
  4. In a bowl, mix ricotta, sautéed spinach, Parmesan cheese, half the herbs, salt, and pepper.
  5. Fill each shell with the ricotta mixture and place seam-side up in the baking dish.
  6. Cover with marinara sauce and sprinkle remaining herbs on top. Bake for 25 minutes until bubbly.
