- 1 lb ground beef (or turkey)
- 2 cups fresh spinach, chopped
- 3 cloves garlic, minced
- 1 cup plain breadcrumbs
- 1 cup fresh mozzarella cheese, shredded
- ½ cup grated Parmesan cheese
- 1 large egg
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat a drizzle of olive oil over medium heat. Sauté chopped spinach with minced garlic until wilted (about 3 minutes). Let cool.
- In a bowl, combine ground meat, sautéed spinach and garlic, breadcrumbs, mozzarella, Parmesan, egg, herbs, salt, and pepper. Mix until just combined.
- Roll into golf ball-sized meatballs and place on a lined baking sheet.
- Bake for 20-25 minutes or until golden brown and cooked through.
- Serve with marinara sauce or over pasta.
