  • 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 4 cups fresh spinach
  • 1 cup sun-dried tomatoes packed in oil, chopped
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Pat chicken breasts dry and season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 5-7 minutes on each side until golden brown.
  3. Remove chicken from the skillet; add minced garlic and sauté for about 30 seconds. Add spinach and cook until wilted.
  4. Pour in heavy cream, add Parmesan cheese and sun-dried tomatoes, stirring until the sauce simmers and thickens slightly.
  5. Return chicken to the skillet, coating it in the sauce for an additional few minutes on low heat.
  6. Serve over pasta or rice, drizzled with extra sauce.
