- 1 lb ribeye or sirloin steak, diced
- 2 cups Yukon Gold or red potatoes, cubed
- 1 cup bell peppers, diced
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 4 large eggs (optional)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Wash and cube the potatoes. Boil in salted water for 5 minutes until slightly tender. Drain well.
- Heat olive oil in a skillet over medium heat. Add onion and bell peppers; cook for about 5 minutes until soft.
- Add diced steak to the skillet and season with salt and pepper. Cook for 3–4 minutes until browned.
- Stir in the prepped potatoes and cook for another 5 minutes until edges are crispy.
- Mix in minced garlic during the last minute of cooking.
- Optionally fry or poach eggs to place on top before serving.
