Ingredients

  • 1 lb ribeye or sirloin steak, diced
  • 2 cups Yukon Gold or red potatoes, cubed
  • 1 cup bell peppers, diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 large eggs (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Wash and cube the potatoes. Boil in salted water for 5 minutes until slightly tender. Drain well.
  2. Heat olive oil in a skillet over medium heat. Add onion and bell peppers; cook for about 5 minutes until soft.
  3. Add diced steak to the skillet and season with salt and pepper. Cook for 3–4 minutes until browned.
  4. Stir in the prepped potatoes and cook for another 5 minutes until edges are crispy.
  5. Mix in minced garlic during the last minute of cooking.
  6. Optionally fry or poach eggs to place on top before serving.
